Carrot Cake...


I came across the recipe for this cake the day before Easter and knew that I had to try it out. It is from the McCormick Spice website. I will add that since we are trying to cut excess fat from our family's diet I substituted 1/2 cup of unsweetened applesauce for half of the oil and I left out the pineapple since I didn't think that we would like it in there.

We decided that this was so much better tasting than the box cake mix and even better than the store bakery too. So I'm sure I will definitely be making it again sometime.

If you substitute the applesauce like I did then it drops the calories to 304, the fat to 15.9 g, and the carbohydrates to 37.4. I know it is still a lot of calories but I think even when you are watching your weight you still have to indulge a little bit.
